Spears consist of the various ways of attaching a pointy bit to the end of a long piece of wood. Although demanded by a relatively large number of classes, there is only a modest number of spears in the game, but some of them (such as the knight's ranseur) are extremely useful weapons. The Gungnir has the highest market price of any non-token recipe and as such is very useful to produce. All spears require the cooperation of the carpenter and the blacksmith; the Gungnir is the rare recipe which uses all four crafters.
Spears come in two types: one-handed and two-handed. It used to be the case that some classes (specifically the Shaman) would only accept one-handed spears, not two-handed spears, but this appears to be not true any more -- all classes that accept spears will accept both kinds. It is currently unknown whether there is still some difference between one-handed and two-handed spears.
It is unfortunately very difficult to determine whether a spear is one-handed or two-handed by looking at it. If you look at your recipe book in the back of your store, you will notice that one-handed and two-handed spears are grouped separately; this is the only way known to distinguish between the two. The list below should be accurate for all non-token recipes, but I can't guarantee it is 100% correct for all token recipes (although generally the token recipes are similar to a non-token recipe whose handedness is known).
The following classes will accept spears: Barbarian, Berserker, Guard, Knight, Paladin, Shaman, Soldier.
